New England Clam Chowder

Ingredients

  • 3 cans chopped clams, juice reserved
  • 1 lb potatoes, diced
  • 1 onion, diced
  • 2 celery stalks, diced
  • 3 cups milk
  • 1 cup clam juice or broth
  • 3 tbsp butter
  • 3 tbsp flour

Instructions

  1. Sauté onion and celery in butter until soft.
  2. Stir in flour and cook 1 minute.
  3. Add clam juice and potatoes; simmer until tender.
  4. Stir in milk and clams.
  5. Heat gently without boiling and season to taste.
